Before making any kind of decision on a company based on a truck model I suggest you make a trip to a truck dealer and check out a similar truck. You might find that a truck that is too "small" by someone else's standards is acceptable by yours.
For a CFI truck you want to look at a T 600 with a 70-72 inch "condo".

I knew some pretty tall guys at Stevens and all of them fit into the cab of the T600 just fine. As long as it was the Aerocab sleeper.

The main crampy thing about a T600 is the narrow aisle between the seats. The T2000 and other "wide cab" conventionals have a width more like that of a cabover, without the doghouse. More room between the seats than you'd get with the narrow cab on a T600, or even a W900.

As mentioned before, the issue you'll run into with the T600 is the space between the seats. Some people whine about it. Personally, I don't spend a lot of time going back and forth so it's not really an issue.
I'm 6'2" and my head doesn't come anywhere near the top of the sleeper, nor do my feet reach the end of the bunk. I think you would be fine there. The T2000 that my trainer had was actually less comfortable for me to drive. The cabinets on the T2000 are closer to the seat, making for a little more room in the sleeper. They prevent the seat from being as far back as it can be in a T600. It's not a huge difference strictly in terms of leg room, but I imagine some of the guys (or ladies) with the enormous bellies are actually better off driving a T600 since they can lean back a little more.
